Cinnamon Roll Cake
One of my favorite treats because it is and reminds me of so many sweet treats: french toast, pancakes, bread pudding and of course, cinnamon rolls! Fabulous as a dessert or even a decadent breakfast. Experiment with different protein powder flavors and extracts to make this cake your own, then share your creation in the comments below!

Ingredients:
1 scoop vanilla whey protein powder (32-34g) 1 large egg
1 Tbl almond flour 1/4 tsp vanilla
1/2 tsp baking powder 1/2 tsp maple extract (optional)
1/2 tsp baking soda 1/4 c. almond milk
1/4 tsp pink Himalayan salt 1Tbl coconut oil, melted
1/2-1 tsp ground cinnamon (to taste)
1/2-1Tbl granulated erythritol

Execution:
1. Lightly grease your fave mug or 5-6" ramekin with coconut oil spray.
2. Whisk together protein powder through erythritol ingredients. (Substitute sweetener and proportions of your choice.)
3. In a separate bowl, whisk together egg through almond milk ingredients. Pour into dry ingredients and whisk together until well-blended and smooth.
4. In a microwave-safe bowl, heat coconut oil on High power for 15-20 seconds, until coconut oil has completely melted. Pour melted coconut oil into cake batter and whisk again until well-blended.
5. Place mug on small dessert plate. Bake in microwave for 50-75 seconds on High. KEEP AN EYE ON IT! It may overflow.*
6. When the cake doesn't sound very wet or jiggly in the mug, it is finished. (I do like to undercook this cake just a tiny bit for texture and sauce.) Cool slightly, then cover mug with a small dessert plate and invert.** With any luck, a bit of cinnamon roll sauce will top your cake! Top with a pat of butter (optional) & sprinkles of fresh cinnamon. Enjoy this bit o' heaven!
*It is normal for the cake to rise higher than the mug. It's all good! But, depending on your mug size, material, etc, your cake may overflow. If it spills a large amount, then split the batter in half next time and cook for only 45 seconds, then check for doneness.
**Sometimes I leave it in the mug, but I like how pretty it is on the plate, too. Be careful when you flip it. It's hot!
