Quick as drive-thru dinner and easy brown bag lunches, too!



Taco Salad Bowl

Running for the border was a fave late night activity for me & my youngest when he was in high school. It was a game....who could get the most food for $5 or less? And we were pretty creative with those dollar menus! To be able to sustain the keto life, many staple meals must be reformulated. This is one of my faves! And it really doesn't require too many mods. I will usually prepare 2lbs worth of ground beef and portion it out in 3oz containers; great for quick dinners and makes packing lunches a snap. Sometimes I even pop those containers of ground beef in the freezer. Fast forward and yo need a quick meal? Reheat that frozen beef for a few minutes while throwing the salad together. Blam! Dinner in less than 10 minutes! 
What are your go-to additions for your version of a Taco Salad Bowl?


Ingredients:

1 Tbl coconut oil/bacon grease
1/4 c. chopped white onion
2 garlic cloves, minced
2 lbs ground beef
1/2 tsp Ground Pink Himalayan salt
Your fave Mexican spices:
{Oregano, Cumin, Cayenne,
Coriander, Smoked Paprika
Chili seasoning, etc.}
3 Tbl Chipotle Pepper Vinegar, or other Tabasco-type vinegary hot sauce

3 c. green salad blend or iceberg
1 Tbl (or more) chopped cilantro
1 tsp chopped fresh jalapeño/serrano pepper
few pinches Ground Pink Himalayan salt
1/2 small avocado, small cubes
6 grape tomatoes, quartered lengthwise
fresh lime, halved
2 Tbl sour cream
1 oz cotija cheese, crumbled small-to-fine


Execution

1. Heat a large frying pan over med-high heat. Reduce to medium; add coconut oil and melt completely.
2. Add chopped white onion. Stir to coat in oil. Sauté while stirring constantly, for 3 mins. Then add minced garlic; stir to coat in oil. Continue sautéing/stirring constantly for 1 minute.
3. Turn heat up to med-high and add all of ground beef. Stir to break up beef into bite-sized chunks or smaller. Continue frying while stirring occasionally, until beef is cooked through. Reduce heat to medium.
4. Add salt and spices of your choice, to your liking. Top with as much or as little hot sauce as you prefer and stir to coat beef completely.
5. Let cool while assembling salad, then portion out into 6 equal servings. (1/3lb beef/serving)
6. To a serving bowl, add green salad blend or iceberg.* Sprinkle with salt and toss salad to coat.
7. Grab one of the portions of ground beef and distribute evenly over the salad.
8. Now, add avocado & grape tomatoes to the party. Squeeze lime half over salad, to your liking.
9. Dollop (do you love that word too?) sour cream over the top. Yum!
10. Sprinkle the crumbled cotija all over the whole salad. Grab a fork and dig in to this deliciousness!

* If using iceberg, add 2gm carbs.
